Madelyn, Sesame Chicken

Here are a few overdue pic's from Madelyn's Valentine's Day party at school. They had ice cream sundaes and traded valentines. We made her valentines and she was so excited to share them with her friends! We cut hearts out of construction paper and made little bee's out of yellow and black pipe cleaners. We attached the bee's to the hearts with a sucker. On the hearts we wrote "mine". (Bee mine) :) They were so cute. No, I did not come up with this idea on my own! We got the idea from the Family Fun website.
Tonight I made a new recipe - Sesame Chicken! Jason & I LOVE Chinese food and I found this recipe in a little magazine I get called Everyday Food. I love reading cookbooks and recipes. Trying new things has been difficult these past few years to due Caroline's allergies. As she is outgrowing more things, I can try more things! I will make this again but will probably add a little more soy sauce to the sauce. It was really good!

Lighter Sesame Chicken
3 Tb. honey
2 Tb. sesame seeds
2 Tb. soy sauce (next time I'll use 3)
1 garlic clove, finely chopped
2 egg whites
1/4 c. cornstarch
1 1/2 lbs boneless, skinless chicken breasts cut into 2 inch chunks
4 scallions
2 Tb. vegetable oil

Mix first 4 ingredients together to make sauce. In large bowl, wisk egg whites and cornstarch together. Add chicken to egg/cornstarch mixture and stir to coat. Season with salt & pepper. Heat oil in non-stick pan. In two batches, brown chicken. Add all chicken to pan and pour sauce over all. Mix and add in scallions. Serve over brown rice and with steamed broccoli.

What a cute idea for the valentines! I'll have to remember that one, although I don't know how well that would go over with a little boy!
The seasame chicken does look good. Wes and I really enjoy Chinese food too but it never tastes like it does in the restaurant. There's probably a reason for that and I probably don't want to know what they use to make it taste like that!
